Lemon Tomato Basil Pasta With Perdue Chicken

This is a family favorite in our house. It's super easy to make, and it tastes like something you'd order at a fine Italian restaurant.

You can make it without any protein, but I love to add in some Perdue Chicken Breasts that come individually wrapped. It's less mess, and is easier for me to get the portions right. To make this Lemon tomato basil pasta with Perdue chicken, you'll need:
(Serves 4)

Ingredients:

  • 4 Perdue Boneless, Skinless Chicken Breast Filets (Fully cooked. Grilling is preferred)
  • 1 lb pasta of your choice 
  • 1/2 cup fresh basil, chopped or dried is fine
  • 4 garlic cloves, finely minced
  • 1/2 cup olive oil
  • 1/4 cup dry white wine
  • Juice from 2 lemons
  • 10 oz. grape tomatoes, thinly sliced
  • 1 tsp coarse salt 
  • 1/2 tsp red pepper flakes (optional)
  • 3/4 cup freshly grated parmesan cheese
  • Fresh ground pepper to taste

Directions:

  • Cook chicken breasts to your liking (I prefer marinated in Italian dressing and grilled).
  • Cook pasta in water that's been moderately salted.
  • While the pasta is cooking, in a large skillet, heat the olive oil and sauté the garlic until it slightly changes color.
  • Add the wine, and cook until reduced (about 2-4 minutes).
  • Add in the tomatoes and basil, salt, red pepper flakes and pepper, and simmer for 5-7 min (until tomatoes are cooked down).
  • Remove the tomato and basil sauce from the heat and add the juice from the lemons. Stir.
  • Add the pasta to a plate or bowl, add sliced chicken on top, and pour your desired amount of tomato and basil sauce over the pasta and chicken. 
  • Top with parmesan cheese and serve.
